Beekman 1802 planted several heirloom peach trees at their farm a few years ago, and have been pleasantly surprised at how well they've thrived through their tough winters. Because of the short season, their peaches don't ripen until September, but for those few weeks they have them around, their smiles are permanently sticky. They add a little fresh ginger to their peach jam to give the late summer sweetness a little playful bite.
